SITUATION

A food manufacturer needed a process validation for newly developed sauces and stews packed in jars and cans.

PROBLEM

An improper canning process can lead to a serious food safety issue and may lead to death if improperly done. FDA and CFIA regulations regarding the bot. Cook should be met and the thermal process should be optimized.

SOLUTION

We conducted validation steps and proper documentation and provided the company with the appropriate solutions and procedures in order to produce shelf-stable canned products.
