Takeout and Delivery Issues

Situation

A restaurant was losing money on almost every takeout transaction and delivery.  This resulted in the cost associated with customer compensation and NO retuning customers.

Problem

The existing menu did not easily translate to takeout or delivery.  By the time the customer took the food home, or it was delivered to their door the product was not up to the standard.  It did not travel well. The client’s complaints meant the restaurant had to credit back the purchase.  This resulted in a loss of revenue including food cost and labor.

Solution

First, we reviewed their menu deciding on what items were appropriate for takeout and delivery.  In some cases, the recipe needed tweaking to travel well.  Additionally, after looking at the strength they had in the kitchen we developed recipes that used existing inventory, mirrored their existing menu, and used the skills they already had in the kitchen.

Next, we researched and recommended packaging that improved the transportability of their food.

Benefits

Orders increased by 176%.  They added new clients and old customers returned as their reputation for good food both on delivery and takeout became viral.  Bottom line improved dramatically as customer no longer requested money back on delivery and takeout food items.
