SITUATION
Luxury resort property in the islands off the Western coast of Europe.

 

PROBLEM
Profitability in the Food & Beverage department has eroded to mid-single-digit status.

 

SOLUTION
Perform a four-day Deep Dive at the property.  Identify areas to drive revenue further via menu engineering and best-practices selling techniques (for banquets and catering), as well as “right-sizing” the labor deployment, procurement, and menu engineering so as to still deliver a Guest experience that fosters a “burning desire to return” in them while at the same time increasing profit margins.

The Resort gets to move out of their vicious cycle of turning over and trying- unsuccessfully- to lure new employees (by needing less bodies to fill the roles) and stabilize the workforce with competent, well-trained people who make their money, earn their benefits and stay employed at The Resort. This enables The Resort to also spend less in associated benefits in the short and long run as they will have lower training costs, lower benefits (staff meals, insurance, vacations to cover, etc.) costs, and lower uniforms costs.
