Health Eating Initiative for Students

SITUATION

World renowned therapeutic education school is requesting assistance in the implementation of a sustainable Farm to School Healthy Eating Initiative. The primary focus of the Client is to ensure healthy eating while maximizing cost-effectiveness. Scratch cooking with minimally processed local sourced ingredients is paramount as well as compliance with industry standards and all local, state and federal regulations

PROBLEM

The overall approach of the current Food Service Program consisted mainly of boxed/pre-packed foods, processed foods as well as foods containing sugar, fats and food coloring. Staff lacked basic culinary skills as well as understanding of  food sanitation and safety protocols

SOLUTION

Reviewed current purchasing programs realizing $100,000 savings on $1.1 million dollar spend.  Implemented training program for staff, created sustainable menus standardized recipes with accurate portion control and IOR protocols.

BENEFITS

Students, faculty and staff enjoyed locally sourced healthier meals. Maximized cost savings initiatives through purchasing programs, manufacturer rebates and negotiated volume savings.
