FARMERS MARKET TO RETAIL, FOODSERVICE AND ONLINE MARKETS

SITUATION
Client had been making gourmet food products and successfully selling them at farmers markets in the area for many years. He had opportunities for growth in retail, foodservice and on-line markets.

PROBLEM
He had a large variety of products he was making by hand in a small commercial kitchen. He had reached his capacity. There were also shelf life issues with some of the products that had to be extended to make sense for further distribution.

SOLUTION
We worked with his recipes to product commercial formulas that he could scale up easily. We also sourced industrial ingredients to replace the retail ingredients he was using to make the products more cost effective with less labor. Shelf life was also improved to withstand retail and restaurant distribution needs.

BENEFITS
Client was able to move production of these items from the kitchen to a manufacturing plant. Improving shelf life opened the markets and reproduceable formulations make production more consistent. He is now offering these products to retail outlets and restaurant as well as on-line portals like Amazon Fresh.
