Analysis of Off-Premise Catering Startup

SITUATION:

Miljoy Ent Inc was contacted by an LA Chef with catering experience who wanted to build-out a kitchen space to produce grab and go meals for corporate entities as well as catering for their special events. She currently did this under the umbrella of a larger company but wanted to try it on her own.

PROBLEM: 

She had no business or management experience. She had no guaranteed corporate contracts. She thought she could get production help from fellow chefs she knew, but nothing was certain.

SOLUTION:

We developed a Business Plan and startup strategy for her. We reviewed the production capacity and cold storage of the rental space in which she was interested. The business plan focused on profitability using the maximum output of that space. We recommended the rental and use of an existing kitchen with unused capacity which would not require an outlay of cash for a buildout of production space.

 BENEFITS:

This more business-like approach would use her chef talents quickly for food production, not a costly buildout. She would not have a large outlay of cash for the buildout. Food production could begin quickly, so the company would be in profits much sooner.
