A Gummy Transformation: From Sticky Situation to Sweet Success!

Situation

An established company in New York hired me to develop a line of vegan confectionaries with pectin. They had worked with other consultants previously, but the formula did not yield a solid gummy. The client faced trouble with the texture of the vegan gummy as it did not set or solidify.

 

Problem

Upon analyzing the client’s previous recipe, I discovered that the sugar content and pH were not ideal for the pectin to set properly. This led to difficulties in achieving the desired texture and consistency in the vegan gummy. The client’s previous consultant had also failed to replicate specific samples of confectionaries they wanted.

Solution

To address the issues, I created a new recipe for the vegan gummies respecting the proper sugar content and pH needed for the pectin to set successfully. I sent physical samples of the new gummies for the client’s approval. Additionally, I developed three different flavors of the gummies per the client’s request. All the necessary information  including formulas, Standard Operating Procedures (SOPs), and nutritional analysis was provided to support the manufacturing process.
